Modelisation and optimisation of an industrial process for a new apple juice clarification chain

The paper proposes a mathematical model allowing the piloting of a new clarification chain of apple juices and ensuring the optimal working of the process. At first the fundamental model parameters are determined by using data analysis techniques, and the recurrent model adapted to the present process is described. Then the optimal control of this model is studied, which allows the determination of the optimal command parameters.
