A new dynamic programming procedure for optimal identification of econometric systems is presented. It is based on a serial multi-stage analytical model. This model could be applied for the optimization of the date palm production process. The date production operations are: fumigation, washing, drying, pulping and packaging. The optimal requirements of the date drying procedure are estimated.
